I dont know why, but this looks so good to me.  I imagine it would be fantastic with a peanut-tahini dressing also.

Sometimes cucumbers bore me to tears. No offense, cucumber, but your chill flavor can be a little underwhelming at times! It wasn’t until I began spiralizing cucumber into long, elegant strands that my affection for this vegetable really began to change.

Recipe: Udon Soup with Bok Choy and Poached Egg — Weeknight Dinner Recipes from The Kitchn | The Kitchn

The bok choy at my local Japanese market looked so fresh and green the other day that I had to pick some up. I also scored a few packets of fresh udon noodles and a bunch of spring onions. Cooked in some chicken broth back home, I had a very satisfying bowl of soup within 15 minutes of walking in the door.

Brown Rice & Millet Croquettes | Christina Cooks.

Even tho this is fried, it is a good recipe for blood sugar control and thus, weight loss.  Just be aware of the higher calories, but this is full of really good whole grains and veggies.  I saw this recipe being made on Create TV today (an offshoot of PBS), and it looked really good.  But what made it pop and stand out was that she served it with a vegan dashi broth on top.  However, her website has no recipe for the dashi.  How she made it, as well as I can remember, all measurements VERY approximate –

2 cups water

1/3 of a red onion, sliced

2 cloves of garlic

4-5 thin slices of fresh ginger

1/2 cup or so of shitake mushrooms, tho she said you could use just about any mushrooms

Cover and bring to a simmer for about 5 minutes.  Add 2-3 tablespoons of soy sauce, turn off heat.  Let it sit for another few minutes, then strain, leaving a few slices of onion behind if you wish.

Alternatively, theres this good vegan recipe for dashi as well.

And heres some baked veggie tempura to go with that vegetarian tempura dipping sauce! Tempura is traditionally fried, so if you want the full flavor experience go for that.  But if you are trying to eat healthier, this is a great alternative method!

Im making veggie tempura today! Needed the sauce to go with it..  to make it vegetarian, I did not use the dashi but substituted 1/2 cup vegetable stock, and reduced the water to 1/2 cup also.
