Thai Coconut Soup (Tom Kha) Recipe – Stupid Easy Paleo

I added baby spinach and bok choy to mine.  As I dont eat seafood, I omitted the shrimp and fish sauce.  In place of fish sauce I added a bit of soy sauce, green curry paste and red miso.  To make this a full meal, I also added some maifun rice noodles.

The bok choy at my local Japanese market looked so fresh and green the other day that I had to pick some up. I also scored a few packets of fresh udon noodles and a bunch of spring onions. Cooked in some chicken broth back home, I had a very satisfying bowl of soup within 15 minutes of walking in the door.

This soup is a riff on the Greek avgolemono: a delicious concoction of beaten eggs and lemon juice, whisked into broth and cooked just enough to thicken. While I borrowed the egg and lemon motif, I also added spinach used orzo instead of the rice. This soup has one other curious feature. It really is a pasta and a soup in one — a two’fer.

Coconut Curry Soup – Thug Kitchen.

Yeahhh this looks really good right now.  If you dont know about Thug Kitchen – its one of my favorite vegetarian recipe blogs.  They also recently came out with a cookbook you can find on amazon.  There is a lot of foul language so if you are sensitive to that kind of thing, this might not be for you.

Why I like it – recipes are simple, using easy to find ingredients.  It also, like my own philosophy in cooking, encourages and allows you to substitute with what you have on hand or your taste preference.
