Easy Roasted Turnips with Lemon | Honest & Tasty

I got a big harvest of turnips from my garden today, tho they are  a different variety than these.  They are a bit too radish-y for me to eat raw, so I am trying out this recipe to see if it makes them more palatable.

 

I’m confused. I don’t know why turnips aren’t popular. Maybe they look a little bit like work. Like you’re going to have to roll up your sleeves and reach for your handkerchief to wipe your brow sw…

Recipe: Snap Peas with Meyer Lemon and Mint — Side Dish Recipes from The Kitchn | The Kitchn

Snap peas and mint from the farmers’ market, a Meyer lemon from a friend’s yard, and a couple of basic pantry ingredients – quick to prepare and speaking wholly of spring. I hesitate to call this a recipe because it’s just something that came together using fresh ingredients I had on hand. But perhaps that is the best kind of recipe for this season, when the new, vibrant flavors call for simple preparations rather than long hours spent over the stove or in the oven.

Recipe: Spinach and Lemon Soup with Orzo — Weeknight Recipes from The Kitchn | The Kitchn

This soup is a riff on the Greek avgolemono: a delicious concoction of beaten eggs and lemon juice, whisked into broth and cooked just enough to thicken. While I borrowed the egg and lemon motif, I also added spinach used orzo instead of the rice. This soup has one other curious feature. It really is a pasta and a soup in one — a two’fer.
