My name is Emily, Im in my early 30s, and I live in the San Luis Valley of Colorado, at 7800′, the largest alpine valley in the world. It’s a very rural area, with very limited food options.And I am a foodie.  I grew up in and around New York City, and value delicious, unique, and ethnic foods.

I am mostly (about 90%) vegetarian, but eat meat maybe once a week.

The Yankee in me is naturally frugal, and for most of my adult life I have had to live on food stamps and very low income, so I generally strive towards foods that can be made inexpensively.

I struggle with my weight, and am always searching for ways to make healthy food which is delicious and wholesome, and filling.

This blog is primarily a collection of recipes which I find interesting and healthy, delicious, and inexpensive.  Occasionally I post an original recipe that I come up with, but mostly I collect some of the great recipes already out there.  I generally limit personal commentary.  While the more popular blogs tend to have a lot of that, I always find myself scrolling past it just to get to the recipe.

This site was originally designed to be my own personal, easily searchable and browsable recipe collection.  The recipes I post are all ones that appeal to my personal tastes. I generally tend to avoid posting “beginner” recipes which are very basic or common.

    Just to let you know, our online website SlimKicker basically turns your diet/fitness goals into a level up game. The tracker will work in conjunction the website, and allow people to track calories burned and number of steps they walk automatically. The more they exercise, the more points they rack up! That’s basically how it will work.
