This recipe meets requirements for a bariatric / weight loss surgery / gastric sleeve diet. In that, it seems to be high in protein, lowish in fat, and low in unrefined carbs.

The use of hominy is what makes it posole – but unfortunately that also makes it higher carb. If you are low carb and want to try this, simply leave out the hominy and add another sturdy low carb vegetable instead. All the flavors will still be there 🙂 I personally would add some green chiles and spinach to increase the flavor and veg anyways.
