The use of hominy is what makes it posole – but unfortunately that also makes it higher carb. If you are low carb and want to try this, simply leave out the hominy and add another sturdy low carb vegetable instead. All the flavors will still be there 🙂 I personally would add some green chiles and spinach to increase the flavor and veg anyways.

This recipe uses a tiny amount of sugar. If you are really strict keto then you could leave it out or use a sugar-free sweetener instead.
Not low carb, as it uses potatoes and some flour to thicken. But, you could use cauliflower or something instead of potatoes if you want.
