Chunky Green And Red Tomato Sauce | Renee’s Garden Seeds

I’m combining this recipe with this one to make it in the instant pot:

In a heavy bottomed saucepan, heat olive oil. Add garlic and onions and sauté very slowly for 10 to 12 minutes until onions are softened and light golden in color. Add green tomatoes and sauté with onions for 3 minutes, stirring frequently. Add red tomatoes, carrot, chicken stock, tomato puree, wine, herbs and chile. Stir together, bring to a boil, then reduce heat to a simmer, cover and cook for 30 to 40 minutes. Uncover and stir well. Recipe: Vegan Fish Sauce | Kitchn

I didnt have mushroom soy sauce, so instead I added a couple handfuls of dried oyster mushrooms I had on hand (shiitake would have been better but whatever lol) to the initial boil. I also felt that the recipe must be calling for wakame thats already hydrated.. because when I added the dried wakame, I needed much much more water as it absorbed..

Fish sauce is that magical, secret ingredient that somehow completes any dish that it’s added to. Traditional to most asian cuisines, a version of fish sauce was also used in ancient Rome.

Easy Grilled Skewer Recipes | Kitchn

None of these recipes are vegan, and only 1 is veg. However, lots of good options for folks who have had bariatric surgery, because you can have small portions and customize what is on your skewer.  Easy to make high protein and portioned meals with a balance of veggies. Great options for most everyone with some new ideas.  I’ll post some veg skewers at some point, too, because anything skewered and grilled on a grill or over a campfire is amazing.

Simply Ming – Shaun Hergatt — Acacia-Glazed Duck Breast with Plum Purée and Fennel Salad, Duck Pho with Sweet Potato Noodles and Thai Herbs

Some really amazing recipes on this episode of Simply Ming.  But, I don’t like Duck, wonder if I could do these with chicken or turkey instead?

New York famed chef Shaun Hergatt joins Ming in the kitchen. Today it’s duck two ways. He creates an Acacia-Glazed Duck Breast with Plum Purée and Fennel Salad, while Ming matches him with Duck Pho with Sweet Potato Noodles and Thai Herbs.

Other ideas include increasing gluten content by adding vital wheat gluten, or using bread flour.  But at my altitude I find I need to add additional protein (aka gluten) even to bread flour.
