Omg, this is such a great list of summer recipes.  There are only a handful that DONT make me drool.  Full of bright fresh flavors of summer.  A strong focus on fresh fruits and veggies, most of the recipes are veg and good for weight loss.

 

Summer produce is in full swing, and we couldn’t be happier. Even if we don’t want to spend a ton of time over a hot stove when it’s warm out, we still want to make the most of the season’s bounty. Plus, we’re always happy to fire up the grill when it’s nice outside. These 22 recipes are like a master class in tomatoes, sweet corn, berries, stone fruits, and more. Time to get cooking.

Strawberry Rhubarb Pie Recipe | SimplyRecipes.com

I simply adore strawberry rhubarb pie.  I used this recipe, but used store bought pie crusts.  I modified the recipe to make it a little healther.  I used fully half the sugar (1/2 cup) and added 1 chopped mango.  I then split the recipe between two pie crusts, leaving each one un-topped, effectively reducing half the dough per pie.  Each pie is fairly small, not overfilled, encouraging each slice to be less without feeling like it.

The BEST homemade strawberry rhubarb pie recipe! Sweet fresh strawberries paired with tart rhubarb and a hint of orange zest.

Recipe: Spinach and Lemon Soup with Orzo — Weeknight Recipes from The Kitchn | The Kitchn

This soup is a riff on the Greek avgolemono: a delicious concoction of beaten eggs and lemon juice, whisked into broth and cooked just enough to thicken. While I borrowed the egg and lemon motif, I also added spinach used orzo instead of the rice. This soup has one other curious feature. It really is a pasta and a soup in one — a two’fer.
