Ive gotten pretty interested in Carbquik recently. Its a bisquik-like baking mix that is very low carb (2g per 1/3 cup flour). Ive been experimenting with it a little, and it does take some getting used to, but overall it tastes good and has a good texture! Pretty exciting for those of us diabetics.

Like most of you I’m guessing, I go through serious lunch phases
I added baby spinach and bok choy to mine. As I dont eat seafood, I omitted the shrimp and fish sauce. In place of fish sauce I added a bit of soy sauce, green curry paste and red miso. To make this a full meal, I also added some maifun rice noodles.

Personally, I don’t like pork. So I fill these with beef, chicken, beans, peppers and onions, or whatever. At thanksgiving I like to fill them with roasted turkey and top them with gravy and cranberry sauce.

I’m doing a combo of two recipes tonight. Plus a half. Im making these brussel sprouts tacos with creamy avovado sauce, but instead of black beans, Im using red lentils as in this Red Lentil Tacos recipe
AND, I’m adding some browned ground taco-seasoned turkey.
