Quick Strawberry Jam
Think you don’t have time to make your own jam? This one comes together in just under an hour—while still managing to totally transform your traditional jam and toast snack thanks to the addition of chia seeds.
1 lb organic strawberries, fresh
2 Tbsp fresh lemon juice
2 Tbsp chia seeds
1 Tbsp honey
1. HULL AND CHOP strawberries. Put in bowl and coarsely mash with fork or pastry blender.
2. STIR in the chia seeds, lemon juice, and honey.
3. COVER and chill until set, about 45 minutes. Keep chilled and use within 2 weeks.
