Spaghetti squash pad thai sounds amazing!!
One of the recipes makes a note that theres a whole lot of “spaghetti” in one squash.. Yes, there is, however, if you are cooking for a family or something, yes, you will likely be cooking other things to round out the meal, and therefore will likely have leftovers. BUT – since I generally am only cooking for myself, I can easily eat an entire spaghetti squash for a meal. In fact, it makes cooking the easiest and simplest, and not to mention super healthy, to make this the main course all on its own! If you switch up your perception to make the vegetables the main course, and have either no sides or small sides of carbs and meat, you can eat a whole lot of food for very little calories.
