Hard boiled eggs at altitude and healthy egg salad

Hard boiled eggs at altitude – Home Cooking – Chowhound.

After years of never getting decent boiled eggs, I tried this method and it worked awesome.  If you are high altitude like me, you might want to try this! I also added in a few tablespoons of apple cider vinegar.

I live at the north end of the springs at just shy of 7,000 feet. the way I get the best hard boiled eggs is bring a pot of water to a rolling boil then place the eggs in the water and boil for 20 minutes. Then transfer the pot under running cold water to dilute out all the boiling water and bring the eggs to a steady cool temp. I then chill under ice for about 10 minutes. then they are ready to peel and enjoy.”

I mashed up 6 very large hard boiled eggs with a fork.  I then mixed in:

1 cup coleslaw mix (cabbage, carrots, broccoli),

1 diced green bell pepper,

1/2 yellow onion,

2 tbs. miracle whip,

3 tbs. light sour cream,

about 1 tsp. salt

about 1 tsp. pepper

dash of italian seasoning

dash of poultry seasoning

dash of paprika

about 1 tsp. mustard seeds

sprinkle of flax seeds

i used whatever i had on hand which seemed like it would work well, as i didnt have the traditional ingredients for egg salad around (like dill and celery).  Be creative and try out different things!  This came out eggcellent hur hur :p
