I love squashes. Theres always some new strange one to try, and they are cheap right now and in season. They are simple and easy to make. Healthy, low in calories, and delicious. And filling! I say leave off the brown sugar and butter. Add some spices at the end, curry powder is good, as is cinnamon and nutmeg, or just salt and pepper.
This can easily become a full meal on its own for 1-2 people, or be a side dish for several more.
Make sure to save your seeds – you can roast them like pumpkin seeds for a yummy snack, or you can save them to plant your own next year!
