Recipe: Zucchini, corn and green chile Calabacitas – Los Angeles Times.

mmm this was yummy!

but I made some modifications based on what i had on hand.

No bacon.

Double butter.

Double zucchini.

1 whole can of corn

1 can of black beans

about 3 cups of my green chile that i made the other day

about 1 cup of mashed potato flakes to thicken it up.

 

Im piling it into soft corn tortillas, topping it with a cream cheese – green chile dip i made, and eating it like tacos.  its excellent!
