Lately, spawned by an intense craving for Qdoba (similar to chipotle, but better imho) due to Chris and I obsessing about it on our road trip, but never actually being able to get one, I have been really into burritos.
The key to me is the steamed tortilla. It makes it stretchy and pliable to wrap up all those good innards, and when done, gives just the right amount of chewy-ness. Ive tried some various methods people have posted using the microwave and such, but it just isnt the same.
The best Ive gotten is to actually steam it – throw a tortilla in a metal colander or steamer, over about an inch of boiling water. After 30 seconds to a minute, its done and ready to go and comes out yum.
Extra bonus – use local, homemade tortillas. even if they have been sitting in a fridge at city market for a month, and arent super fresh, they are still superior to the generic bland mission tortillas.
