So one of my favorite meals is this:
1/2 cup of rice, cooked
1/2 cup of black beans
1/2 cup of corn
2 cups romaine lettuce, chopped
1/2 fresh lime juice
1/4 cup of shredded mexican cheese
fresh cilantro to taste
1. Microwave beans, corn, and cheese in a big bowl for 1-2 minutes or until cheese is thoroughly melted. Stir it all up.
2. Add the rice on top
3. Put the lettuce on top of the rice, and squeeze the lime juice on top of the lettuce.
4. Thats it! Mix in cilantro for more flavor, or add a little bit of salsa or sour cream on top. This is one of my cheapest(corn beans and rice come from food bank) and most filling, well rounded meals. Its very quick too, with the rice taking about 20 minutes to cook, and everything else can be prepared in the meantime.
