Lentil Curry

YUM!  Super healthy, and I did get lucky, as I got the lentils from the food bank for free!  They are pretty cheap for a bag tho, like dried beans.

Brown rice or quinoa would be better to server it over, but my food bank only has white rice so i used that.  My food stamps were just reduced, otherwise I would have gotten brown rice.

Additions that I made to the recipe –

I quadrupled the curry powder – I used an entire 1lb bag of the lentils, not the 1 cup called for in the recipe.  I still think it could use even more curry.

I also added 2 handfuls of dried cranberries. (I bought a 5lb bag of them in bulk from Amazon for $15.  Compare that to the small bags of craisins.. its way cheaper if you love these things like I do).

I added 1 can of mixed veggies.

In my bowl: I used Greek Yogurt for the plain yogurt. Its more expensive and rare to find at a food bank, but, it is much creamier than regular yogurt without extra fat and also has higher protein content.  The slightly sour flavor contrasts well with the slightly sweet/spicy of the curry.   I added a small handful of fresh cilantro on top.  And then topped it all with 1 cup of chopped romaine lettuce.

Its good!! And very filling.  Its my first meal of the day today (and its 3pm) and I cant even finish my serving.  Next time it would be good with a little bit of diced apples too.
